Crab and Shrimp Louie

 

This summer has been nothing short of beautiful ! The warm temperatures, gentle breezes, puffy white clouds and blue skies have literally knocked me over. It’s amazing what a little sunshine can do for the spirit.

Last weekend I basked in the glory of summer  by enjoying  the simple pleasures. A yummy Cosmo at the beach with my pal Karen, A quick visit with my son on his evening beach patrol and a half day on the beach with my hubby.

 

1 PART CITRON VODKA * 1 PART CONTREAU * 1/2 PART FRESH LIME JUICE *  11/2 PARTS CRANBERRY * SHAKE IT UP !

After all that hard work I was in no mood to cook a hot meal. Instead, I stopped by Santa Monica Seafood to pick up some Dungeness Crab Meat and Fresh Bay Shrimp and headed home to whip up my favorite Crab and Shrimp Louie Salad. It’s so easy your head will spin.

Let’s start with the dressing:

FOUR SIMPLE INGREDIENTS

PUT IT IN A BOWL

WHISK !

Next up the Salad:

CHOW DOWN !!

Here’s what you need

My Louie Dressing:

1 cup mayonnaise

3 tablespoons of  ketchup

4 teaspoons of lime juice

1 pinch or two of cayenne pepper

Note: if the dressing is a little thick add more lime juice

Crab & Shrimp Louie Salad / Serves 4

1 head romaine lettuce, chopped

3/4 pound fresh picked Dungeness Crabmeat

3/4 pound fresh Bay Shrimp

1-2 avocados, peeled, pitted, and sliced lengthwise

3 tomatoes, quartered

4 hard boiled eggs

Optional garnish: sliced cucumber

Put it together

Before you start, put your plates and forks in the freezer. There is nothing better than eating this salad on a chilled plate.

 The Dressing

Mix together mayonnaise,
ketchup, lime,  juice and cayenne pepper. Pour into individual ramikens.

The Salad

Make a bed of chopped romaine lettuce
on a large plate. Add the crab, shrimp avocado,  eggs, tomatoes and lemon wedges.

Tuck in ramekin of dressing, Garnish with a cucumber slice.

SERVE WITH A CHUBBY, WARM  BREAD AND A CHILLED  WHITE WINE . HEAVENLY !

Note: This salad will serve four but looks spectacular on a large platter for a group. Adjust the quantities accordingly. Let me know how it works out.
