Cezanne's Orange Pancakes

 

I never dreamed I would be obsessed by a pancake until I tried these several years ago on a family trip to Kauai. They are my daughter-in-law’s favorite (hence the name) and now they are mine too!

They are easy to make and even easier to eat. They have a delicious, fluffy, cake-like texture that makes my mouth water just thinking about them. Good quality maple syrup and fresh orange juice is the key to the success for these beauties.

Here’s what you need

1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 tsp cinnamon
1/4 teaspoon salt

1 egg beaten
1 cup orange juice - fresh if possible
1/2 cup chopped walnuts

2 tablespoons of cooking oil
Zest of one orange added to batter
(if you are feeling extra gourmet)


put it together

Combine first six ingredients in a bowl.
Combine next three ingredients in a separate bowl.
Whisk.
Combine both ingredients until blended.
Pour batter onto hot lightly greased griddle and cook until golden brown.
Makes 8-10 standard pancakes or 34 dollar sized pancakes.

Top with warm maple syrup. Yum!
